Very old barrels. Barrels carrying the "infinity sign"
(an 8 laying downwards) are still in the fermentation phase.

1 year old Lambic De Troch tasting moment.
This Lambic is very seldom seen in cafés nowadays. The Lambic
is mainly used for blending into Gueuze and preparing the Chapeau
fruitbeers.. It was gorgeous !!! |

Another big tasting moment. 2 years old Cuvée Chapeau
Oude Geuze. The real stuff ! It was one of the best Gueuze I had
that day. Extraordinary !! |
